Gloucester is a classic English cheese, originating in the late 16th century. Traditionally this cheese is made using exclusively milk from Gloucester cattle, giving it its name. Before making Gloucester the milk is skimmed, removing much of its fat. A Double Gloucester, however is made using full fat milk and accordingly has a rich, buttery nuttiness and almost flaky texture. Abbeydale's Double Gloucester is made with the addition of onion and chive, giving it an added savory punch.
