Originally grown in China and the Himalayas, adzuki beans are uniformly red and small and are rich in iron, fiber, folate, and protein. Once soaked, these beans can be used for a variety of dishes - they hold their shape after cooking for savory dishes and salads, or they can be sweetened and mashed and used as a red bean paste in traditional Japanese and East Asian pastries and baked buns.
