These small, green mung beans are the perfect way to make your own fresh bean sprouts at home. To sprout, rinse the beans and soak overnight. After soaking, drain the beans and cover with a paper towel or cheesecloth and continue to rinse and drain 3 times a day until sprouts begin to form. When they reach your preferred length, simply toss into salads or sprinkle on top of sandwiches for a healthy, fresh treat. Children love helping the beans begin to sprout and watching them grow (and eating the product of their own hard work). When skinned and split, the beans are flat and yellow, and called moong dal.
