This traditional Greek-Cypriot cheese dates all the way back to the Byzantine era. Kefolityri is typically made with sheep, goat or a combination of both milks. A hard cheese, Kefolityri is salty and sharp with an almost spicy tang. Try in pasta, lamb or stewed vegetable dishes (also a great frying cheese!).
