Incredibly popular in the Middle East and Africa, this "burnt" wheat gets its name from the process of burning the wheat berries off the stalk. The resulting flavor is toasted and rich, making for full-flavored pilafs and salads. Sensational when mixed in salads with chickpeas and herbs or in a side dish with roasted cauliflower and tahini.
