Produced by Spanish cheese legend Rafael Baez, Monte Enebro is a singularly unusual cheese. Lauded as one of the finest expressions of milk to come out of the Iberian peninsula this century, Monte Enebro is a log-shaped, pure-white cheese encompassed by a white-gray rind. The inclusion of penicilium roqueforti (a.k.a. blue cheese mold) on the rind helps develop a complex, tangy, and slightly spicy flavor profile. It flourises alongside wines made from the Muscat grape, as well as many other fruity reds or even dessert wines.
