The peels of each lemon are allowed to air-dry for two months before being added to golden, cold extracted extra virgin olive oil. The result is a sunny and smooth combination, tasting of ripe lemons, that's perfect for salads, fish and seafood, veal, and lamb. We love this infusion stirred with capers in a light cream sauce.
