An Italian soft ripened cheese in the Stracchino family, Robiola is a blend milk cheese made with varying proportions of cow, goat and sheep's milk. This triple crme has a luxurious, buttery texture and a nutty, multilayer complexity owing to the blend of milk. In ItalyRobiola is typically used as a table cheese- served with oil, salt, pepper and crusty bread. It can also be made into Risotto Robiola, a traditional dish from Piedmont in Northern Italy.
