Black garlic is a unique seasoning that's been appearing everywhere lately, from gourmet brunches to dessert menus. Naturally fermented without the use of additives or preservatives, we find the deep, rich, almost sweet flavor to be completely addictive and the creamy, almost fudge-like texture to be equally intriguing. Full of umami but without the sharp taste and odors associated with traditional garlic, black garlic can be used in spreads, aiolis, and sauces, or as is. We recommend peeling and slicing a clove over a handmade ricotta cheese with roasted peppers and a little olive oil and letting your taste buds be amazed.
